Quick and easy Salsa

Ingredients:
  • 28-ounce can whole tomatoes (peeled) with juice
  • 1 14 1/2 ounce can diced tomatoes
  • 1/4 cup chopped red onion ( 1 small red onion will do)
  • 1 clove garlic, chopped
  • 4 - 5 jalepeƱo, quartered and sliced thin or per taste
  • 1/2 cup - 1 cup cilantro chopped roughly
  • Crushed Pineapple with juice - 1 cup or 8 Oz can
  • Juice from 1/2 a fresh lime
  • 1/2 teaspoon salt
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon ground cumin


Directions:
  1. Place all the ingredients in the bowl of a food processor fit with chopping blade.
  2. Pulse until desired consistency is required. Pulse less for chunkier salsa and more for a smoother version.
  3. Refrigerate for an hour before serving with chips. You might be tempted to add more salt, but when you are serving with chips which has quite a bit of salt, it balances out. So, eat with the chips and then adjust if required.
