On Food and Cooking: The Science and Lore of the Kitchen

Harold McGee's On Food and Cooking is a kitchen classic. Hailed by Time magazine as "a minor masterpiece" when it first appeared in 1984, On Food and Cooking is the bible to which food lovers and professional chefs worldwide turn for an understanding of where our foods come from, what exactly they're made of, and how cooking transforms them into something new and delicious.

Now, for its twentieth anniversary, Harold McGee has prepared a new, fully revised and updated edition of On Food and Cooking. He has rewritten the text almost completely, expanded it by two-thirds, and commissioned more than 100 new illustrations. As compulsively readable and engaging as ever, the new On Food and Cooking provides countless eye-opening insights into food, its preparation, and its enjoyment.

On Food and Cooking pioneered the translation of technical food science into cook-friendly kitchen science and helped give birth to the inventive culinary movement known as "molecular gastronomy." Though other books have now been written about kitchen science, On Food and Cooking remains unmatched in the accuracy, clarity, and thoroughness of its explanations, and the intriguing way in which it blends science with the historical evolution of foods and cooking techniques.

Among the major themes addressed throughout this new edition are:
  • Traditional and modern methods of food production and their influences on food quality
  • The great diversity of methods by which people in different places and times have prepared the same ingredients
  • Tips for selecting the best ingredients and preparing them successfully
  • The particular substances that give foods their flavors and that give us pleasure
  • Our evolving knowledge of the health benefits and risks of foods
On Food and Cooking is an invaluable and monumental compendium of basic information about ingredients, cooking methods, and the pleasures of eating. It will delight and fascinate anyone who has ever cooked, savored, or wondered about food.

7 Delicious Cupcake Flavors to Indulge In

There are so many delicious cupcake flavors out in the world, that I’m here to help you choose which ones to indulge in! Ah, yes the original flavors from vanilla to chocolate have now been pushed aside for the emulsifying flavors that enhance our original vanilla and chocolate! Don’t catch my drift? Well, read on about these delicious cupcake flavors that will surely satisfy all those taste buds!

1. SALTED CARAMEL CUPCAKES
This delicious cupcake flavor gives you the best of both salty and sweet! This succulent caramel, with a hint of sea salt and delicious moist vanilla (or chocolate) cupcake with caramel inside makes your taste buds dance! I love caramel, and I’m a big fan of sea salt – I was a little apprehensive in the beginning, but definitely I turned a huge 180 after trying one of these bad boys! DELICIOUS!

2. CHOCOLATE COCONUT CUPCAKES
Who doesn’t want a tropical twist to an old original favorite?! I sure do! I tried this flavor at “Sprinkles” cupcakes! And they’re heavenly! A light, fluffy, chocolate cupcake, with a delicious, sweet, yet tropical coconut frosting – with real coconut flakes! Those are my favorite, they balance each other perfectly!

3. STRAWBERRY JELLO CUPCAKES
Wait, what?! Yes, my friend introduced these to me and you can actually use any Jello flavor you’d like! It’s white cake mix, Cool Whip, and any flavor Jello! Follow the instructions to the cake mix, as soon as it’s done cooling, poke holes onto the top of the cake and pour half of the Jello mix into the cool cupcake! It leaves a cool half white cake/strawberry cake. Then mix the rest of the Jello into the cool Whip for frosting! These are perfect for the summer, they’re light and delicious!

4. COFFEE/MOCHA CUPCAKES
For all my caffeine enthusiasts this cupcake is screaming your name! I’ve tried both a coffee flavored and mocha – they’re both delicious! A bit strong on the mocha side, but, still nonetheless delicious! It’s perfect with milk! And, the frosting is beyond decadent! It’s smooth, sweet, with a kick of coffee or mocha! This gem will surely wake you up!

5. LEMON CUPCAKES
Yes, this sweet, tart, tangy flavor will surely leave a clean, crisp, feeling on your taste buds! I’ve tried this cupcake flavored with either vanilla and coconut! They’re both delicious! The vanilla cupcake with lemon gives more of lemon taste than the coconut with lemon because it gives the best of both worlds and blends together naturally. Coconut and lemon highlight each other nicely! But, both are my favorite!

6. RED VELVET
This is a staple in my household! Although I’m a fan, but not big of a fan! Does that even make sense?! Anyways, this delicate flavor of chocolate and cream cheese are sure to please! It’s simple, yet daring, and its beautiful shade of red definitely makes this delicious treat an eye candy!

7. BLACK AND WHITE CUPCAKES
Do you love chocolate and vanilla? Well, this cupcake gives you just that! It’s the best of both flavors! At my local cupcake shop, they offer either vanilla with chocolate frosting, chocolate with vanilla frosting or vanilla/chocolate marble with chocolate/vanilla frosting! Intense right?! I know! The marble cupcake is delicious, and the frosting is even better!

Cupcakes have always been my favorite dessert! With all the new flavors coming out, its hard to just pick 7 delicious cupcake flavors to indulge in! Do you have any cupcake flavors you’d like to try or have tried and they’re amazing? Have you tried any flavors that just didn’t tickle your taste buds?

7 Ways to Avoid Late-Night Snacking

If you’re trying to lose weight, start eating better, or simply learn better habits, you might be interested in figuring out the best ways to avoid late-night snacking. This is a huge problem for me (surprise, surprsie!); I’ll often decide I need a handful of Goldfish crackers or a bowl of cereal before bed. While it’s technically occasionally okay, eating before you go to sleep is disastrous to your metabolism. So, why not learn the right ways to avoid late-night snacking together?

1. Quench Your Thirst
One of the best ways to avoid late-night snacking is to fulfill yourself in another way. Sometimes when you feel hungry, you’re actually thirsty. Even if that’s not the case, you can often fulfill your cravings by drinking something in lieu of eating. Try drinking a glass of water instead; it can trick your belly into thinking it’s full.

2. Eat a Filling Dinner
If you get hungry late at night, you might not be eating enough at dinner. I don’t mean you should load up your plate, but make sure that you’re getting plenty of protein, vitamins, and nutrients. Don’t skimp on your last meal of the day, just don’t go overboard either.

3. Stop with The Sugar

Bad carbs, like processed sugar, will make you feel hungrier. Even soda will ultimately make you feel like you need to eat. It’s because of the way sugar affects your insulin levels. Throughout the day, try to avoid too much sugar and see if your late-night cravings start to disappear.

4. Practice Portion Control
Sometimes you really are hungry, and that’s okay. Just make sure you don’t stuff yourself. If you’re craving something in particular, let yourself have a very small portion. Pay attention to the appropriate serving size and make sure you don’t go over the recommended amount. Better still, try a healthier snack; swap the cookies for fresh fruit.

5. Turn to Tea
In addition to drinking water, try some hot tea. Herbal teas or green tea are both excellent options – just don’t choose anything with caffeine. It calms and soothes you, plus the hot drink tricks your brain into thinking it’s having a proper meal. It’s also likely that a cup of tea will help make you sleepy, so you can simply go on to bed.

6. Distract Yourself
If you feel yourself getting hungry, try a distraction. Skip the TV, since it might trigger you to eat. Pick up a book, turn to your blog, try knitting – anything that takes your mind off of food will work. You might even try stretching or meditation. If your cravings continue, think about calling a friend instead.

7. Brush Your Teeth
Finally, why not practice some nice, healthy oral hygiene? Brushing your teeth is good for you, of course, but you’re also less likely to want to eat if your mouth is clean and minty fresh. Besides, nothing in the world pairs well with the taste of toothpaste.

Like say, if you only snack occasionally, it’s not the end of the world. However, it is better if you turn to fruits, vegetables, or something light like yogurt. You don’t need a full blown meal and you should definitely avoid anything heavy. If you’re a late-night snacker, what’s your biggest guilty pleasure?

7 Foods to Help You Live Longer

Did you know that there are foods to help you live longer? While none of us can expect to live forever, and we all know the benefits of a healthy diet, scientists and researchers are continuously testing how different foods and diets affect our lifespans. The results are in – and some of them might surprise you.

1. Fruit Fancy
Okay, so this one probably didn’t surprise you, but fruit is essential to a long life. Currently, it’s thought that people who consume a variety of fruits on a regular basis will long outlive those who don’t, simply due to the fresh nutrients that fruit contains. It’s especially worth opting for bright colored fruits, too, as the same pigments that give them their bright shade is thought to protect from cancer. Fruit is one of the best foods to help you live longer, and there’s a huge variety to choose from.

2. Sweet Potato
I love sweet potatoes  They taste great with stews and curries, and are often a lighter choice than traditional carbohydrates like roast potatoes. You can be sure that they’ll benefit you, too – people who live in Okinawa, Japan, have the world’s longest life expectancy and lowest cancer and heart disease rates due to their huge consumption of the veg.

3. Chocolate

As you’ve probably guessed, this isn’t a packet of maltesers or a big slap of Dairy Milk! Dark chocolate is packed full of antioxidants that it can be very difficult to get elsewhere, and they cut your risk of heart disease right down. The oldest woman in the world, who reached 122 years and 164 days, put her long life down to a square of dark chocolate a day.

4. Fish
Oily fish is more than just a great picnic food. Salmon, mackerel and trout are renowned for their health benefits, and by swapping red meat for a portion of fish, you reduce your risk of bowel cancer and heart disease too. Frozen and fresh oily fish is a great source of vitamins A and D, which boost the immune system, and fatty acids that reduce the risk of brain damage, stroke and heart disease.

5. Green Tea
Have you tried green tea yet? While it was thought that green tea was a health food phase, it seems it’ll stick around thanks to it’s impressive health benefits. The tea has been proven to regulate blood pressure, reduce cholesterol and boost the immune system, along with improving cardiovascular health. Some studies have even linked green tea with reducing the chance of cancer.

6. Olive Oil
That Mediterranean diet just keeps being proved the best. It’s a good monounsaturated fat that cuts the risk of stroke and heart disease, and olive oil is packed with antioxidants and micro nutrients too. People following an olive oil-dominated diet are said to live up to 20% longer than those who don’t, so it’s a great diet to try!

7. Broccoli
Broccoli is one food that really deserves it’s title as a super food. It’s packed with Vitamin C, fibre, calcium and antioxidants, and it’s a powerful anti-carcinogen. It’s also been proven to prevent arthritis, ulcers, viruses, cataracts and heart disease. Wow!

How many of these great foods to help you live longer do you consume regularly? I’ll be upping my broccoli intake from now on, and I’m on the hunt for a gorgeous fruit bowl to display plenty of colorful offerings – and dark chocolate will definitely be hitting my fridge. Will you be making any changes? I’d love to hear them!

8 Ways to Fight Belly Fat in The Home

One of the most popular reasons women join gyms and exercise classes at this time of the year is to learn ways to fight belly fat – and when you start counting down to the hotter temperatures and holiday departure dates, it’s not hard to see why. We’ll all be stripping down to bikinis and cute summer dresses soon, so it’s time to lose the winter weight! With the stomach area often being voted the most difficult to change, here’s some helpful ways to fight belly fat without a mammoth training schedule.

1. Good Fat Is Essential
Started a fat free diet to slim down your stomach? Think again. People who collect fat around their stomach don’t tend to thrive on fat free diets, due to the absence of good fats. The solution? Cut refined carbohydrates such as white rice, and eat foods that contain good fats such as olive oil, sea bass and avocado instead. Cutting bad fats while retaining good ones is one of the ways to fight belly fat that’s frequently used by boot camps! Wholegrain bread with an avocado, lemon and chili flake topping is the ideal flab-fighting snack.

2. Everything in Moderation
We’ve all heard this one, but studies show that it actually works – just maybe not how you’d expect it too. The American Journal of Clinical Nutrition published a five-week study where the women involved were offered their favorite fast food for five days a week. At the end of the five weeks, the women had started eating less and less of the fast food, and were much less tempted by it. They did get the same happiness after eating it, despite eating less. The study found the same effect can be replicated over meals eaten several days apart – but if you eat a fast food meal once a week, you will eat more of it. Eating foods you’d normally ban cuts down their appeal, stops binging and prevents cravings, helping you to shift that belly fat faster.

3. Fast Days
The 5:2 diet has been doing the rounds since Christmas, with some people claiming that it’s an easy and sustainable way to lose weight. An assistant professor in nutrition found that people who eat 25% less calories every other day can lose up to 30lbs in just eight weeks. To get maximum benefits, he recommends eating 1,500 calories one day, and sticking to your normal eating habits the next. Just make sure you don’t sabotage your diet on your off days, and work out regularly to get maximum benefit.

4. Cardio Queen
Strength training is said to be best when you are trying to burn off tummy fat – but it seems that aerobic exercise will help you see results faster. Aerobic exercise burns 67% more calories and significantly reduces belly fat compared with resistance training, and the participants were only running 12 miles a week. Work up to that by training four or five days a week, and adding in resistance training to define and shape your abdomen.

5. Sleep Just Right
A study in the Journal of Sleep recently found that there is a direct correlation between the amount of sleep you get and your amount of stomach fat – participants who slept under five hours or over eight hours gained more stomach fat than those who sleep between six and seven hours. The quality of the sleep mattered too – try to get good quality sleep in a dark, quiet room.

6. Fibre Fix
Soluble fibre is directly linked to abdomen fat too – the more you consume, the less belly fat you are likely to have. Soluble fibre can be found in a variety of food, including vegetables, fruits and beans, so it’s relatively easy to fit into your diet. Aim for at least 10g per day, which is the same at one cup of green peas, two small apples or one cup of pinto beans.

7. Coconut Dreams
There’s a reason that people who live around coconut trees (and the gorgeous beaches usually found nearby!) have flatter stomachs. Coconut oil is a saturated fat that has anti-viral and anti-bacterial properties, both of which can boost the thyroid and metabolism. It was even tested on cows in 1900s, in an attempt to fatten them up, but actually made them leaner. Get cooking with coconut oil!

8. Sweet as Sugar
Okay, so we all know we should be cutting sugar – but do you know which type? Glucose is found in potatoes and rice, and out of every 120 calories of glucose you consume, only 1 will be stored as fat. Man made fructose appears in a variety of sweet treats and snacks, and 40 calories out of 120 will be stored as fat. It’s worthwhile keeping an eye on your sugar consumption!

These ways to fight belly fat have certainly transformed my kitchen – I’m testing out my favorite recipes with healthy ingredients such as coconut oil, and I’ve even started jogging on the spot when I’m cooking. At this rate, I should have a defined waist in no time! Do you have any great ways to fight belly fat in the home? I’d love to hear them!
